We had recently picked up fresh veggies from the CSA including radishes, which I really don&#8217;t like. So I looked up desserts you could make with radishes as a way to get rid of them. I found a recipe for Radish Muffins and decided to give it a shot! I substituted craisins for raisins and reduced the amount of\u00a0 oil and sugar. Voila! Although not exactly a normal dessert, the muffins were tasty and people really seemed to like them, including me! No one identified the secret ingredient except for a slight &#8220;bite&#8221; that they couldn&#8217;t explain. This only encouraged me to make muffins out of things that you don&#8217;t typically make muffins out of. So now the list is:<\/p>\n<ul>\n<li>Radish Craisin<\/li>\n<li>Kale Orange<\/li>\n<li>Cucumber Lemon<\/li>\n<li>Chocolate Broccoli (made on a dare from the CSA owner who challenged me to make a sweet muffin out of broccoli)<\/li>\n<li>Applesauce Raisin Bran (these are pretty normal as muffins go)<\/li>\n<\/ul>\n<p>All of these are gently sweet muffins that I have modified to reduce sugar and oil from recipes I have found on the internet. I like to make large batches and freeze them so that I have a variety to select from for breakfast or as a snack. They re-heat well in a minute or less. My favorite is probably the Radish Craisin, followed by the Kale Orange as a close second.
